SPICY PUMPKIN COOKIES

2 1/2 Cups All-Purpose Flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoon VANNS Pumpkin Pie Spice
1/2 teaspoon vanilla extract
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg

Preheat oven to 350 degrees F (175 C)
Combine flour, baking powder, baking soda, Vanns Pumpkin Pie Spice, and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and the white sugar. Add pumpkin, egg, and 1 teaspoon of vanilla to the butter mixture, and beat till creamy. Mix in dry ingredients.
Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven.
Cool cookies, then glaze or ice if desired.

SIMPLE PUMPKIN SOUP

1/2 cup onion
3 tablespoons butter
2 cups mashed, cooked pumpkin
1 teaspoon salt
1 tablespoon sugar
1 tablespoon Vanns Pumpkin Pie Spice
3 cups chicken broth
1/2 cup half and half

Chop the onions and gently brown with butter in a pan
Put mashed pumpkin with onions in a pan. Add the salt, sugar and Vanns Pumpkin Pie Spice.
Slowly add the chicken broth and heat thoroughly.
Blend in blender before serving.
To serve, pour into a tureen and top with cream.
Makes 4 to 6 small servings.
