Prepare the Lysander Steak
Marinade; Cover & marinate for at least 4 hours, or
overnight, in the refrigerator.
Mix the
Lysander Onion Dip Mix
with the melted butter and spread mixture evenly over the meat. Place beef in large baking dish.
Cover with foil; chill at least 6 hours. (Can be made 1 day ahead. Keep chilled.)
Preheat oven to 450°.
Place beef on rack in large roasting pan. Roast for 15 minutes, baste,
then lower the heat to 400o till a meat
thermometer inserted into center of beef registers 125°F for rare, about 35 minutes.
Remove from oven and cover with foil; let stand 10 minutes.
Transfer beef to cutting board.
Skim grease from beef juices, pour accumulated juices from roasts into
saucepan for gravy.. Bring
to boil, stir in a tablespoon of corn starch mixed with water till
smooth.. Serves 8.
