Donuts
This is a very old recipe...the instructions are a bit vague

2 cups brown sugar
1-1/2 pints milk
1/2 cup lard *
1 egg
1 teaspoon salt
1/2 teaspoon soda
1/2 teaspoon nutmeg
1 yeast cake

Put to raise at night
Air and twist in morning
Let rise again
Fry at noon

(Mix in order listed
Let rise overnight
Knead and let rise again another 4 hours, at least
Roll out and fry.)

Translated directions:
Dissolve the yeast cake in 1/4 cup warm water.
Put in large bowl
Add the following ingredients:
Sugar, melted shortening, eggs, warm milk, salt, soda, nutmeg and 1 1/2 cups flour.
Mix well adding enough flour to make a moderately soft dough.
Place on floured surface, and knead until smooth

You may have to add more flour if dough is very soft or runs off your hands
Knead about 3 to 5 minutes
Shape into ball and place into bowl
Cover and let rise until double
Or over night in refrigerator

Punch down and roll out about 1/4 inch thick.
Cut into doughnut shapes or cut and twist.
Let rise until double again
Fry in hot oil
Drain on paper towels
Sprinkle with confectioners sugar or cinnamon and sugar

*LARD=Solid shortening- aka Crisco, etc.
