Easy Asian Chicken SaladSERVING SIZE: 3-4
PREPARATION TIME: 15 minutes
INGREDIENTS: * 4 deli chicken breasts, pre-baked (or use the breasts of a pre-made rotisserie chicken)
* 1 romaine heart
* 1 1/2 c. coleslaw mix (or finely shredded cabbage)
* 1/3 c.
Fresh Gourmet Toasted Sliced Almonds * 1/2 c.
Fresh Gourmet Garlic Ginger Wonton Strips[/b]
For Dressing: * 1/3 c. vinegar
* 1/2 c. sugar
* 3/4 tsp. salt
* 1 tsp. dry mustard
* 1 tsp. horseradish
* 1/4 c. Spanish onion, diced
* 1 c. canola oil
PREPARATION: 1. Chop chicken into bite-sized pieces, put aside.
To make dressing, combine everything but the oil in a blender of food processor and process until liquefied.
2. Continue to blend and slowly drizzle in the oil until blended.
3. Place coleslaw mix in a large bowl, and add the dressing. Mix. Add lettuce, almonds and wontons and cut up chicken and lightly toss.
